It seems the trade schools in America have come under fire recently, and the US Government has been investigating them. Why you ask? Well, all those student loans which were used for students to take courses or get retrained were made with the taxpayer?s guarantee that they?d be repaid. Unfortunately, the economic crisis of 2008 was a bit more than anyone had expected, and many of those loans have gone south ? for one simple reason, there were no jobs.

Even still, the job market is soft, even for those who have gained the skills and degrees the employers need after going to vocational schools and colleges. In fact, if you follow the news items of the American Restaurant Association you?d see how many venues and companies are not making headway, some filing bankruptcy, and others excited for the modest gains. A very popular mid-range family restaurant just announced they were closing 7-stores in the California Bay Area (reference: San Jose Mercury News June 13, 2011).

Okay so, that?s where we are at, and it?s a real issue. Yesterday, I was talking with a former student who?d gone the vocational school route and became a Chef. The student didn?t really like the work much, and in the restaurant business you either love your job, or hate it, the Chef reminded me. Is it because institutional kitchens, restaurants, etc, are busy cutting costs, and it just causes more stress? Yes, that?s one major issue, and that on top of the tight job market makes it less fun too, many Chefs are trapped in jobs they don?t want, until, they cut more staff and finally them too.

Indeed, I did talk to a Chef who had trouble starting his own restaurant and got a job for $80,000 a year at the Indian Casino in Temecula, CA and that is pretty decent isn?t it? He went to a Vocational Trade School and then got a job there, he told me that it wasn?t that hard to get work as a chef, but I think things may have changed, as this was 2-3 years ago.

Since then, I have read in the Wall Street Journal that many of the private for-profit colleges were turning out lots of Chef Degrees but there was not a lot of work, one cited Miami and South Florida, where students took courses and after the economy and real estate collapsed there people stopped going out to eat and all the students had to pay their student loans but couldn?t, now all of us tax payers have to pay, because we are guaranteeing those student loans through the Federal Government.

So, now here is the question; do you also have student loans piled up? Should you go back to a vocational school again, to get retrained, and finally get a decent job? Then you will have even more student loans. If you choose a career as a chef, you must understand that the restaurant industry by far is one of the toughest, thankless, and most time consuming professions. If you own a restaurant it might be rewarding, although, if you are running a restaurant you get no time off, no sleep, and have to deal with the ups and downs of the economy.

Perhaps, before you go to a vocational school, you need to look at the job market and figure out if there will be real jobs in that sector in 2-3 years from now, before you sign up, and sign your name to more student loan documents. Please consider all this and think on it, and let me know what you?ve decided once you do.
